Creamy Seafood Lasagna with Scallops, Shrimp, and Imitation Crab

Why Choose Seafood Lasagna for Your Next Meal?

While the comforting layers of traditional lasagna — rich meat sauce, creamy ricotta, and melted mozzarella — hold a special place in many hearts, seafood lasagna carves out its own unique niche. It offers a lighter yet equally indulgent profile, making it a fantastic choice for those seeking to diversify their pasta repertoire or simply enjoy a gourmet meal without the heaviness of red meat. The interplay of delicate seafood flavors with a rich, aromatic white sauce creates a harmonious blend that is both elegant and profoundly satisfying. This dish is not just a meal; it’s an experience, perfect for a special family dinner, entertaining guests, or simply treating yourself to something truly extraordinary.

The appeal of this creamy seafood lasagna lies in its dynamic texture and sophisticated taste. Unlike the uniformity often found in ground meat lasagnas, this recipe introduces a delightful variety of textures from the plump shrimp, tender scallops, and flaky crab. Each bite offers a different nuance, keeping your palate engaged and eager for more. Furthermore, it serves as an excellent option for those with dietary preferences or restrictions regarding red meat, opening up the world of lasagna to a wider audience.

The Heart of the Dish: A Luscious White Sauce

The creamy white sauce is undeniably the cornerstone of this seafood lasagna, distinguishing it from its tomato-based counterparts. This velvety béchamel-style sauce serves as the perfect canvas, delicately coating each layer and infusing the entire dish with a rich, buttery depth. Crafted with butter, flour, milk, and heavy cream, it achieves a luxurious consistency that binds the seafood and noodles together, ensuring every forkful is moist and flavorful.

What truly elevates this sauce are the subtle yet impactful additions. Chicken broth and clam juice contribute an umami richness and a hint of the ocean, while a splash of sherry wine introduces a complex, nutty note. Seasonings like white pepper, salt, and the quintessential Old Bay seasoning weave through the sauce, enhancing the natural sweetness of the seafood and creating a profile that is both comforting and distinctly gourmet. This exquisite sauce ensures that the lasagna is never dry, instead offering a melt-in-your-mouth experience that seafood lovers will adore.

Star Ingredients: Scallops, Shrimp, and Imitation Crab

The selection of seafood in this lasagna is crucial to its success, bringing a symphony of flavors and textures to the dish.

  • Bay Scallops: These small, sweet morsels are celebrated for their delicate flavor and tender texture. When perfectly cooked, they offer a subtle sweetness that complements the rich sauce beautifully. Their quick-cooking nature means they integrate seamlessly into the lasagna without becoming tough.
  • Medium Shrimp: A beloved favorite, shrimp adds a delightful chewiness and a mild, briny taste that is universally appealing. Peeled and deveined, they are easy to prepare and absorb the flavors of the sauce and seasonings, particularly the Old Bay, which highlights their natural sweetness.
  • Leg-Style Imitation Crab Meat: While not actual crab, imitation crab (often made from pollock) provides a fantastic sweet and flaky texture that mimics real crab meat at a more accessible price point. It contributes a familiar flavor profile and helps create that luxurious “seafood medley” feel without the effort of cracking shells. For those desiring an even more indulgent experience, lump crab meat or lobster can be substituted or added for an extra touch of decadence.

The combination of these three types of seafood ensures a varied and exciting bite every time, making this lasagna far from monotonous. The careful balance of flavors from the ocean, combined with the creamy sauce, creates a memorable dish that stands out.

Assembling Your Creamy Seafood Lasagna Masterpiece

Crafting this seafood lasagna is a rewarding culinary journey. The process involves thoughtful layering, ensuring that each component contributes to the overall harmony of the dish. It begins with no-boil lasagna noodles, which simplify preparation and guarantee a perfect al dente texture once baked. These are layered with generous portions of the rich seafood mixture and liberal dollops of the reserved creamy white sauce, creating a beautiful mosaic of flavors and textures.

The final layer is a generous blanket of shredded mozzarella cheese, which melts into a bubbly, golden-brown crust during baking, sealing in all the deliciousness below. The assembly process is intuitive, allowing home cooks to create a visually appealing and incredibly appetizing dish. The key is to distribute the seafood and sauce evenly, ensuring that every slice of lasagna is packed with flavor. Once baked, the lasagna emerges from the oven, a golden, bubbling testament to the culinary magic that happens when fresh seafood meets a classic Italian staple.

Ingredients

  • 1 green onion, white part only, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp canola oil
  • 1 tbsp + 1/4 C butter
  • 1/2 C chicken broth
  • 2 oz clam juice
  • 1/2 lb bay scallops
  • 1/2 lb medium shrimp, peeled and deveined
  • 4 oz leg style imitation crab meat, shredded
  • 1/4 tsp white pepper, divided
  • 1/4 C all purpose flour
  • 1/2 C heavy cream
  • 3/4 C milk
  • 2 tbsp sherry wine
  • 1/4 tsp old bay seasoning, plus more for sprinkling on shrimp
  • 1/5 tsp salt
  • 1/4 C grated parmesan cheese
  • 1 1/2 C shredded mozzarella cheese
  • 6 no boil lasagna noodles

Instructions

  1. Sprinkle the shrimp with some Old Bay seasoning.
  2. In a large skillet, sauté green onion and garlic in 1 tbsp butter until tender. Stir in the chicken broth, clam juice, and sherry. Bring to a boil. Add scallops, shrimp, imitation crab meat, Old Bay seasoning, and 1/2 of the white pepper. Reduce heat to low and simmer until shrimp and scallops are opaque, about 5-7 minutes.
  3. Remove the cooked seafood from the liquid and set aside. Remove the cooking liquid and set aside in another bowl.
  4. Melt 1/4 C butter in a large saucepan. Stir in the flour until the mixture is smooth, creating a roux. Gradually stir in the milk and the reserved liquid from the cooked seafood. Add the remaining white pepper and the salt. Simmer over medium heat, stirring constantly, until the sauce has thickened to your desired consistency.
  5. Remove the sauce from the heat and gently stir in the heavy cream and grated Parmesan cheese until fully incorporated and smooth.
  6. Stir half of the prepared sauce in with the seafood mixture. Reserve the remaining sauce for layering.
  7. Spread half of the reserved sauce into the bottom of a greased 8×8 baking dish. Arrange 2 lasagna noodles over the sauce. Evenly spread half of the seafood mixture on top of the lasagna noodles, followed by half of the remaining reserved sauce. Repeat this process with the next 2 lasagna noodles, the rest of the seafood mixture, and the remaining sauce. Top generously with shredded mozzarella cheese.
  8. Cover the baking dish loosely with aluminum foil and bake in a preheated oven at 350°F (175°C) for 15 minutes. After 15 minutes, remove the foil and continue baking for another 15 minutes, or until the cheese is beautifully bubbly and lightly browned. Allow the lasagna to cool for 10-15 minutes before slicing and serving to ensure it sets properly.
