- 2 whole ruby red grapefruit
- 4 tbsp unsalted butter
- ¾ C packed brown sugar
- 1 ¾ C all purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp fresh chopped basil, plus more for garnish
- ⅛ tsp ground allspice
- 2 large eggs
- 2 tsp vanilla extract
- ¾ C unsalted butter, room temperature
- 1 C granulated sugar
- ½ C reduced fat milk
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).

- Cut each grapefruit in half lengthwise. Carefully remove the grapefruit segments from the peel by cutting around the inside circumference and then between each piece of fruit. Gently pop the grapefruit segments out of the peel with a fork. Set these beautiful segments aside.
- In a small saucepan, melt the 4 tablespoons of butter over medium heat until fragrant. Add the brown sugar and stir continuously until the mixture is bubbly and fully combined. Pour this luscious caramelized mixture evenly into the prepared cake pan. Arrange the grapefruit segments attractively on top of the brown sugar mixture. Set the pan aside.
- Prepare the cake batter: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, ground allspice, and fresh chopped basil. Once cooled for 10 minutes, carefully loosen the edges of the cake by running a butter knife around the perimeter of the pan. Place a serving plate upside down over the cake pan and, holding both firmly, quickly flip the cake over onto the plate. Gently lift the pan away.
