A Delicious Collaboration: My Chobani Journey
A few weeks ago, an incredible opportunity landed in my inbox – an email from none other than Chobani! They had discovered my Peanut Butter Frozen Yogurt recipe on FoodGawker and were so impressed that they offered to send me a generous box of their renowned yogurt for recipe experimentation. As a long-time fan of Chobani’s creamy, high-quality Greek yogurt, my answer was an enthusiastic “Yes!” The moment that box arrived, my kitchen transformed into a hub of culinary creativity. I immediately set to work, and I’m thrilled to share one of the delicious results with you today: these amazing Orange Creamsicle Mini Muffins. Keep an eye out next week for another exciting Chobani-inspired creation!
The inspiration for these muffins truly began with a desire to capture that iconic orange creamsicle flavor in a baked good. I envisioned something light, fluffy, and bursting with fresh citrus notes, complemented by the subtle tang and richness of yogurt. Chobani’s 0% fat vanilla Greek yogurt was the perfect foundation, lending a wonderful moistness and delicate vanilla undertone without being heavy.
To truly bring the creamsicle magic to life, I incorporated plenty of fresh squeezed orange juice and generous amounts of bright orange zest. The scent alone was intoxicating!
Crafting the Perfect Orange Creamsicle Flavor
I adapted a beloved Orange Yogurt Muffins recipe from my trusted Better Homes and Gardens New Cookbook, knowing it would provide a solid base for my citrusy vision. The key was to amplify the orange and cream elements. Using Chobani’s fat-free vanilla Greek yogurt provided an incredible texture and a subtle creaminess that married perfectly with the vibrant orange. The abundance of fresh orange zest and juice wasn’t just for flavor; it contributed to a delightful aroma that filled my kitchen as these mini muffins baked to golden perfection. The batter itself was a revelation – a truly accurate representation of an orange creamsicle! Honestly, it was a challenge to resist sampling too much of the luscious mixture before it even made it into the muffin tins. There was a genuine risk these muffins wouldn’t make it to the oven, but I persevered, and I’m so glad I did, because now I get to share this incredible recipe with you.

Why Mini Muffins are a Mighty Choice
Opting for mini muffins offers several fantastic advantages that make this recipe even more appealing. Firstly, they are the perfect portion size, making them ideal for quick breakfasts on the go, lunchbox treats, or elegant additions to a brunch spread. Their smaller stature also means they bake much faster than standard-sized muffins, shaving precious minutes off your total preparation time. This rapid baking time makes them incredibly convenient for busy mornings or when you need a delightful homemade snack in a hurry. Furthermore, mini muffins are wonderfully bite-sized, reducing mess and making them particularly kid-friendly. They’re also excellent for entertaining, allowing guests to easily grab a small, sweet bite without feeling overwhelmed. Each miniature muffin packs all the incredible flavor of its larger counterparts into a perfectly sized package.

- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg, beaten
- 1 C fat free vanilla Greek yogurt. (Chobani recommended!)
- 1/3 C vegetable oil
- 2 tbsp fresh squeezed orange juice
For the glaze:
- 1/2 C sifted powdered sugar
- 1 tbsp whipping cream
- 2 tbsp fresh squeezed orange juice

Instructions
- In a large mixing bowl, whisk together the flour, salt, sugar, baking powder, baking soda and orange zest.
- In another mixing bowl, whisk together 2 tbsp orange juice, oil, egg and yogurt.

- Spoon the batter evenly into 24 lined mini muffin cups in a mini muffin pan.
- Bake for 10-15 minutes at 350°F (175°C) or until a toothpick inserted into the center of one of the muffins comes out clean.

- Once the muffins are baked, remove them from the oven and allow them to cool completely on a wire rack. Once cooled, brush or drizzle the tops generously with the prepared glaze.
Notes
This recipe is a delightful adaptation from the classic Orange Yogurt Muffins found in the Better Homes and Gardens New Cookbook. For the best flavor and texture, always use fresh orange zest and juice. The key to light and fluffy muffins is not to overmix the batter; a few lumps are perfectly fine. Enjoy these mini delights for breakfast, a snack, or even a light dessert!
Tips for Muffin Perfection
Achieving perfectly tender and flavorful Orange Creamsicle Mini Muffins is simpler than you think with a few key baking tips:
- Don’t Overmix: This is arguably the most crucial rule for tender muffins. Overmixing develops the gluten in the flour too much, resulting in tough, chewy muffins. Mix the wet and dry ingredients only until just combined, even if a few lumps remain.
- Fresh Ingredients are Key: For that truly authentic orange creamsicle flavor, always use fresh squeezed orange juice and freshly zested oranges. The bright, aromatic oils from the zest make a huge difference compared to bottled juices or dried zest.
- Room Temperature Ingredients: Ensure your egg and yogurt are at room temperature. This helps them incorporate more evenly into the batter, leading to a smoother consistency and a better rise.
- Preheat Your Oven Properly: A fully preheated oven ensures the muffins start baking immediately, helping them rise quickly and set properly.
- Don’t Overbake: Mini muffins bake quickly, so keep a close eye on them. Overbaking can lead to dry muffins. Start checking at the 10-minute mark; a toothpick inserted into the center should come out clean.
- Cool Completely Before Glazing: While it’s tempting to glaze warm muffins, waiting until they are fully cooled prevents the glaze from melting and running off, ensuring a beautiful, even coating.
Serving Suggestions and Creative Variations
These Orange Creamsicle Mini Muffins are incredibly versatile and can be enjoyed in numerous ways. They are, of course, a phenomenal addition to any breakfast spread, pairing beautifully with a cup of coffee or a glass of milk. Imagine them as part of a vibrant brunch buffet, alongside fresh fruit, scrambled eggs, and bacon. For a delightful afternoon pick-me-up, these mini muffins hit just the right spot – a sweet treat that feels both indulgent and refreshingly light. Kids will adore them as an after-school snack, and they’re also perfect for packing into lunchboxes.
Feeling adventurous? Here are a few ideas to customize your next batch:
- Add-ins: Fold in a handful of white chocolate chips or dried cranberries to the batter for an extra layer of sweetness and texture.
- Boost the Citrus: For an even more intense orange flavor, consider adding a tiny dash of orange extract (start with 1/4 teaspoon).
- Cream Cheese Glaze: Instead of the simple powdered sugar glaze, whip up a cream cheese frosting for a richer, tangier topping.
- Larger Muffins: If mini muffins aren’t your preference, you can easily adapt this recipe to make 12 standard-sized muffins. Just increase the baking time to approximately 18-22 minutes, or until a toothpick comes out clean.
- Yogurt Swaps: While vanilla Greek yogurt is ideal for the creamsicle flavor, you could experiment with plain Greek yogurt and add a touch more vanilla extract, or even an orange-flavored yogurt for an extra citrus punch.
No matter how you choose to enjoy them, these Orange Creamsicle Mini Muffins are guaranteed to bring a smile to your face and a delightful burst of flavor to your day.
