  • 1/2 tbsp butter
  • 1 small sprig of fresh rosemary, chopped
  • 1/2 tsp kosher salt (or more or less based on your taste preference)
  • 1/4 tsp ground black pepper

Instructions

  1. Combine rosemary, shallot, brussels sprouts, garlic and salt and pepper in a bowl. Set aside.
  2. Cook bacon in a 10-inch cast iron skillet over medium heat until crisp. Remove the cooked bacon from the skillet and set aside on a paper towel-lined plate, leaving the rendered bacon grease in the skillet.
  3. Add the prepared brussels sprout mixture and the butter to the skillet with the bacon grease. Sauté, stirring occasionally, until the brussels sprouts are tender and slightly caramelized, about 5-7 minutes.
  4. Remove the skillet from the heat. Stir in the cooked bacon and grated parmesan cheese. Mix well to combine all ingredients. Evenly sprinkle the crumbled goat cheese over the mixture, then carefully pour the beaten eggs over the top. Gently stir the mixture once or twice to ensure even distribution of the ingredients within the eggs.
  5. Transfer the skillet to a preheated oven and bake at 350°F (175°C) for 15 minutes, or until the center of the frittata is set and lightly golden.
