My recent escape in late April with Ken to Asheville, NC, was nothing short of magical. We settled into a charming, cozy cabin nestled on the side of a modest mountain, mere minutes from downtown Asheville’s vibrant energy. Further along, we serendipitously discovered the Pisgah Inn, a remarkable establishment perched literally at the summit of a mountain. Our descent was via the iconic Blue Ridge Parkway, a truly breathtaking drive, albeit a little intimidating for someone who has spent her entire life amidst the flatlands of Florida.

I yearn for those serene views, the crisp air, and the profoundly relaxing atmosphere. I want to return, right now! Perhaps one day, my dream of living there will materialize. For now, my heart is already planning our next much-anticipated vacation to the magnificent state of North Carolina, proving that some places simply capture a part of your soul and never let go.

Ingredients
- 8 oz whole wheat linguine
- 2 medium zucchini, halved lengthwise and sliced
- 1 small sweet onion, halved and sliced thin
- ¼ tsp ancho chili powder
- Salt & fresh ground pepper
- 1 tbsp olive oil
- Splash white wine (about ¼ cup dry white wine)
- Juice from one lemon (approx. 2-3 tbsp)
- Fresh shredded Parmesan cheese (for garnish, optional)
- Fresh thyme (for garnish, optional)
Instructions
- Bring a large pot of salted water to a rolling boil. Add the whole wheat linguine and cook according to package directions until it reaches an al dente consistency (firm to the bite).
- While the pasta cooks, heat a large skillet over medium-high heat. In a bowl, toss the sliced zucchini, onions, ancho chili powder, a pinch of salt, freshly ground pepper, and olive oil until well coated. Add the seasoned vegetables to the hot skillet. Cook for a few minutes, stirring occasionally, until the zucchini and onions are almost tender, but still retain a slight crunch. Then, pour in a generous splash of white wine (approximately ¼ cup). Continue to cook until the white wine has reduced and largely evaporated, about 3-4 minutes.
